Cheese Sauce Ingredients
1 cup potato, cooked and diced
1/2 cup yellow onion, cooked and diced
1/4 cup carrot, cooked and diced
1/2 a roasted red bell pepper
1 cup broth (from cooking the veggies, so when you drain them, save it aside.)
1/2 cup raw cashews that have been soaked overnight
1/4 cup nutritional years
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon garlic powder
A pinch paprika
A pinch cayenne (*or more)
*Note on the cashews: To speed the soaking process, cover in warm but not hot water and soak for 30 minutes. Overnight or two nights works better though.
First, Roast the Red Bell Pepper
Wash the pepper, cut in half lengthwise, scrape out the white innards and seeds.
Place open side down on a parchment paper-lined baking sheet.
Bake at 400º 25 minutes or until the skin bubbles up and gets black and the flesh is tender.
Remove the pepper. After it has cooled, pinch off the skin.
Dice and store in fridge in a glass jar. We’ll use half of this one in our recipe.
Next, Cook the Veggies
Wash, peel and dice the carrot, onion, and potato.
Put them in a small pan with two cups or so of water, and simmer until they are tender enough to mash with a fork.
Drain, but keep the water aside. You will need one cup. If you don’t have enough add some veggie brother.
The cooked, cooled vegetables go into the food processor. So does the roasted red pepper (1/2 of it.)
Add the Fat & Flavor
Add the cashews, nutritional yeast, lemon juice, salt, garlic powder, paprika, and cayenne and process for about a minute.
Then add half the broth, and process for another minute.
Transfer from the larger food processor container into the smoothie cup.
Process, then add the remaining broth and process again.
The sauce is done.
Mac & Cheeze
Mix 2 to 3 cups cooked whole grain macaroni with all of the sauce in a baking dish.
Grind mixed peppercorns over the top.
Top with breadcrumbs.
Bake at 400º until the topping has browned.
Serve and enjoy!
