(I know what you’re thinking, but heroin, the drug, doesn’t have an e on the end.)
Okay, this sandwich is one of my favorite things in the freaking Universe right now. We found this excellent sourdough mini-loaf perfect for a sub roll. It’s oil free, it’s WFPB approved.
I slather this bread in walnut sauce, Meati brand mushroom root “steak” slices, and a whole pan full of peppers, onions and mushrooms. And it’s still 100% WFPB.
Hubs will probably add plant-based Myoko’s cashew cheese, which has coconut oil, so that’s not a whole food.
I am going to savor this sandwich for dinner, right after I photograph it. YUM!
Here’s the process.
The mushroom steaks
I used a package of Meati brand mushroom root steaks. I let them thaw partially, then put them into a pre-heated pan. They really stick, so I add some broth with the first flip. I cook these for two minutes, then flip, then two more, and so on for about 15 to 20 minutes. You want to be sure the center is piping hot and solid. Slice one open and see what you think.

After they’re as done, take them out, cool a little, then slice with a super-sharp knife.
The toppings
Slice up one large or two small yellow onions, a big green bell pepper, a red bell pepper, 12 - 15 oz of mushrooms, a couple cloves of garlic, hot peppers if you want.
Cook in a preheated skillet, stirring. Use broth when they start to stick. Cover to speed ‘em up. But cook ‘em down to get that brown goo that forms.
Get them just shy of tender. I like a little bite.
The Walnut Sauce
It’s the most simple thing in the world, a cup of walnuts, about 3/4 tablespoon of tamari, a clove of garlic, and about 1/4 cup water.
Whir it up in a blender and voila. Sauce!
Put it together
Slice the sourdough lengthwise. Spread it generously with walnut sauce.
Add a layer of fresh greens, then the slices of mushroom root steak, and then top it all with the cooked pepper-onion mixture.
Slice into serving sizes and serve.
Mmmm, heaven, and a great weekend meal.
Options
This is just as mouthwatering without the Meati steaks. Substitute some marinated tofu slices, Seitan slices, or just have it with the peppers and onions and mushrooms on a generous bed of raw greens and even tomato slices.
My husband likes to add a little bit of Myoko’s cashew based cheese to his, and that’s what you see in the photo. I don’t indulge, as it has coconut oil and I’m watching sat fats to continue reducing cholesterol without meds.
You cannot screw up this sandwich!
