It might’ve been Sylvester the Cat who used this as his catch phrase, although with his lisp it always sounded like “Thufferin’ thuccotath!” (You remember him. Tweety’s friend.)
I had not thought about succotash since my mother-in-law used to make it, and I recreated from memory with a few additions for a whole food, all-plant succotash that is protein-packed and delicious.
But the best thing about this recipe is how EASY is it.
SUCCOTASH
Ingredients
2 cups lima beans, frozen
4 cups sweet corn, frozen
14 or 14.5-ounce can of diced tomatoes (You know, the cans that used to be 15 oz.) (I used about 3/4 of the 14.5 oz can.)
1 smallish yellow onion, diced
1 medium red bell pepper, diced
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
3/4 teaspoon sage
Black pepper
Fresh parsley to garnish
Method
First, dice up your onion, and pepper, and toss them into your pre-heated skillet. Stir, cooking on medium, adding broth if it sticks, until they’re tender.
I thawed my frozen veggies for a few minutes in the microwave first. Dump the lima beans, corn, and tomatoes into the pan, and stir, cooking until everything is hot, and simmering.
Add the seasonings except pepper and parsley.
Simmer, uncovered, stirring until all the veggies are fork tender and the tomato juice has mostly cooked down. It shouldn’t take long.
Add black pepper and scatter surface with salt if desired.
Serve over rice, noodles, baked potatoes, or bread.
Sidebar: I didn’t have lima beans, so I used soya (edamame) and it was excellent. Plus all the benefits of soy! Do you know it REDUCES risk of breast cancer, and lower risk of recurrence in breast cancer survivors? Early science feared the “Phytoestrogens” in soy would act like animal estrogens, which cause breast cancer and its recurrence. But new science proves phytoestrogens (plant-estrogens) actually have the opposite effect.
