MARINATED TOFU BITES
Ingredients
1/3 cup good balsamic vinegar
1/3 cup vegan worcestershire sauce
1/3 cup reduced sodium tamari
1/2 teaspoon liquid smoke
1 lb extra firm or super firm tofu, diced to bite-size.
Mix the marinade with a wire whisk.
Dice the tofu to bite size and place into a shallow dish with a tight fitting cover. Keep the formation tight, fitting all bites into two layers. One would be better.
Pour the marinade over the tofu, replace cover. Shake and turn to coat all pieces.
Refrigerate from 8 to 48 hours.
After soaking is complete, preheat oven to 400º.
Spoon onto a baking sheet lined in parchment or silicone mat and bake for 11 minutes.
It will dry out fast, so immediately after baking, I usually brush a little leftover marinade over the cubes, then cover with tin foil until ready to serve.
Serving suggestion: Use as a topping for giant dinner salads. Top mixed greens and over fresh veggies with diced cooked sweet potatoes, the tofu bites, some sesame seeds, raisins, and crushed walnuts.
I use my very good Sclafani balsamic as a dressing, but it’s been discontinued. It’s aged, and sweet, and thick, and affordable. A rare combination. I’m in search of a replacement so let me know if you have one.
My husband uses a balsamic glaze, which is also super easy to make and I’ll include it in a salad dressing post one of these days.
