You can’t see the bread, here, but it’s there, underneath the toppings!
Ingredients
The egcellent salad
1 can chick peas (garbanzo beans) drained, rinsed, mashed
1/2 red onion, diced
1 stalk celery, fine diced
1 tomato, diced
2 tablespoons yellow mustard
2 tablespoons dill relish
1/2 teaspoon Kala Namak mineral salt*
Pepper to taste
The Sandwich
Two slices Ezekiel Bread, lightly toasted**
Thinly sliced red onion (use the other half)
Thinly sliced green pepper
Shredded romaine
Shredded kale
Method
Drain the beans, rinse them. Then put them in a single layer on a baking sheer or cutting board or a wide shallow bowl, and mash them with a potato masher.
Mix in all other ingredients for the salad, saving the diced tomatoes for last. (Do not use canned diced tomatoes. In this case, only fresh will work.) Stir gently so as not to crush the tomatoes.
Taste frequently as you add ingredients. Add a little at a time until you get the flavor just right.
Spread the salad on one slice of lightly toasted Ezekiel Bread.
Stack the mixed romaine & kale, the onion and pepper slices, and diced tomatoes on the other slice.
Smoosh them together, and voila! You have one egcellent sammy.

*The kala namak black salt has a slightly sulphur taste that mimics eggs perfectly. You can buy it on Amazon here:
