Maggie, why do you use coffee, hot coffee at that, as the liquid to blend the ingredients for the frosting, instead of just water or soy milk?
Hot water would work just as well if you don't like the coffee flavor. I should go back and add that.
I found a recipe for a mocha frosting with coffee years and years ago, and it just worked so well. And yes, hot worked so much better than cool coffee, so I've been adding it to chocolate and peanut butter frostings ever since. I use decaf, BTW.
